Delicious Bite-Sized Vegan Chocolate Covered Apple Slices.
Ingredients
- 2 Apples (I used Honeycrisp)
- 1 Pack of Enjoy Life Semi Sweet Chocolate
- 1 Bar Of Vegan White Chocolate (If you can find it)
- 1 Box of Peanuts (Whole or Chopped)
- Homemade Vegan Caramel (Optional)
- Small Amount Of Coconut Oil
- Skewer Sticks
Directions
Wash Apples. In a bowl, set your apples down with water, vinegar, and baking soda. Let them sit for 15 minutes.
Nut Prep. Chop about 2 heaping handfuls of peanuts. Place into a bowl. (You can skip this step if you bought them chopped already.)
Prep Apples. Drain your apples and rinse one more time. With a knife, cut your apples into 2-inch slices. Stick a skewer in each slice.
Melt Chocolate. In a pot, throw in 2 cups of your semi-sweet chocolate chips with a spoonful of coconut oil. Let this melt over low heat stirring once or twice. (If you were able to find vegan white chocolate, repeat this step with another pot.)
Cover Apples. Dip an apple slice in the chocolate of choice, you will need a spoon to help fully cover it. Then, coat in peanuts. Set in the freezer for 4 minutes or until the chocolate hardens. If you are going to coat your apple slices in both choices you must let one chocolate get hard in the freezer then coat or drizzle the second chocolate and put it in the freezer again. Try as many different combinations as you’d like.
Plate. Place as many as you’d like on a plate, and enjoy!
Notes
The fun part is you can use a variety of different toppings for the apple slices.
Any leftover slices should go into the fridge
I was only able to find vegan white chocolate from Whole Foods.
I’d highly recommend using vegan caramel as a topping or dipping with this.
The link to my homemade vegan caramel is right here.
Lastly, try not to keep them in the freezer for too long – the texture will become weird.
