1) Vegan Flautas
Growing up, I had the privilege to taste some of the best Mexican dishes out there. After going vegan, I knew I needed to be able to veganize those staple Mexican meals. This recipe is one of my favorite veganized, authentic Mexican dishes. This is my yummy and crunchy vegan flautas recipe! Perfected over dozens, maybe even hundreds of attempts. These are loaded with potatoes, lion’s mane mushroom crumble, and vegan cheese! This recipe is gluten-free, soy-free, and easy to prepare. I highly recommend pairing them with some Mexican yellow rice and refried pinto beans!
2) Fried Oyster Mushrooms
This is one of those vegan recipes that will have you and everyone who tries them addicted! Not only that, your non-vegan friends will be shocked that they are not eating some type of chicken or meat. I mean it – this texture and flavor is the best “imitation chicken” I’ve ever tried. Also, this recipe is so easy. It uses 7 or fewer ingredients and I bet you already have half of them in your pantry!
After taking a bite, most would describe it as crunchy, crispy, and meaty! I also love this recipe because it is so diverse – you can add these “nuggets” to a variety of meals. I enjoy and recommend pairing them with some good ole vegan mash potatoes and mac and cheese, or you can make them like wings by coating them with your favorite sauce (bbq, buffalo, teriyaki, etc) and enjoying them with fries! You can also turn this into a fried oyster mushrooms sandwich with vegan mayo and lettuce!
